My brother-in-law passed away last week. When I tell some people about his death, they all say, "I am sorry." In response to that, what should I say to them?

Yes, I think a simple 'Thank you' is appropriate.

I agree that 'thank you' is sufficient and appropriate. I believe that 'thanks' is too informal here.
A dignified nod might also work with some people, hopefully giving the impression that you don't feel up to talking but still being courteous.
Not 'it's alright', that could make you seem hard and uncaring.
