I think your basic query is related to the expression after "during the".

You can use either "10 years of work" or "10 years' work". It is clarified that the apostrophe is after the plural "years". The apostrophe is not placed between r and s. If you are not comfortable with using apostrophe after s, use the expression with "of".

The correct way to write "10-year-work" is "10-year work". This expression is also correct.

So, only the first sentence is grammatically correct. However, I would prefer not to write it. There are several variations to convey your sense. In my view, the sense of "work" is implied when you are talking about projects. The sentence can be written without using the word "work" with little difference in meaning e.g.
- During the last 10 years, I did a lot of projects.

This is possible but odd. If it is a lot of projects then it is your work period.
During my ten years working at the company I did a lot of different projects.

Because ten year's work is an amount of work - the amount that takes ten years.
I did two months' work in two weeks, so now I need a holiday.


During the 10-year-work I did a lot of projects
No. By hyphenating you are making this a compound adjective.
You can say 'during the work' but then the work is ongoing, it cannot be modified by a length of time.
It took ten years to complete the dam. During the ten-year project, only three workers were injured and none seriously.

If you hyphenate it makes an adjective
a child who is ten years old = a ten-year-old child.
Sometimes you omit 'child' because this is such a common expression, and just say 'the ten-year-old' but that is a special case where the adjective is used without a noun or pronoun.


If you are talking about yourself, the most natural would be the possessive and participle.

Yes. For example, "During my 10 years as a [xxxx], I worked on a lot of projects" (where [xxxx] is an occupation--possibly more than one--that I was engaged in, e.g., laborer, crane operator, bricklayer, construction manager, designer, technician, analyst, etc.)

I agree with the example sentence. One more variation is:

- During 10 years of my service, I worked on a lot of projects.
