Using the Cambridge English Corpus in our products means we teach the language that learners will encounter in their everyday lives – language that’s useful, current and that helps your learners to sound natural when they speak and write.

why have they used Simple Future ( will encounter) and not the present simple?

Please also explain the use of dash in the context.

What they teach now you will encounter in the future. They did not teach you yet so ... you don't know what you will encounter
