vegan "scrambled egg" from Tufo, recipe by VegaNoga


350/400 g silk tofu (soft or hard it does not matter)
1 tablespoonful of coconut cream for frying (can be replaced with vegetable oil)
1 teaspoon of turmeric powder
2-3 "injections" of black Indian salt
Salt according to taste


1. Remove the tofu from the package and place it in a bowl. Sprinkle over the tofu: the turmeric, black Indian salt, and the salt.

Tip: Be careful not to overdo with the amount of turmeric. Do not be tempted to add more while preparing the mixture, because the yellow color will be caught only in frying. The same applies to the Indian salt, and if you overdo with it.

2. Using a fork, smash the tofu until it starts to look like scrambled "Egg". Try not to turn it into mashed potatoes;) in the end, give a last mixing so that all the spices will cover all the pieces of tofu.

3. Heat the pan and add the coconut cream. Wait for the cream to be dissolved and make a circular motion with the frying pan to dissolve the cream all over the surface. Add the tofu mixture and fry in an enjoyable way until the frying is right for you. I love scribbled with brown parts.
Serving suggestions: served with toast, tofu cream cheese, chopped salad, jam, tahini, olives, sundried tomato paste. Short-enjoy a vegan breakfast properly!
