It's usually called an "operating room" (abbreviated "OR") or, more rarely, "operating theater" in AmE. "Operating theatre" would be more usual in BrE. An OR is not to be confused with an "ER" for "emergency room". The procedures carried out in an OR are usually called "surgery", but, especially in BrE, "a surgery" is the word for a doctor's office with examining rooms.

And of course an ER is called A&E in Britain, short for Accident and Emergency Department.

Here we'd call it surgery, in general meaning.
The exact place where the surgical operation is done is called operating room.
