I had two eggs for breakfast and ______ of them was fresh.

A) either

B) neither

C) no

D) none
I think the right answer may be "neither"-- but why?

You're right. Think of "neither" as "not either".

What are the statements without this construction?

I had two eggs for breakfast

1 The two eggs were fresh.

Or

2 The two eggs were not fresh.

If you want to join sentence 1, that uses the word "both".
I had two eggs for breakfast. The two eggs were fresh.

1 I had two eggs for breakfast and both of them were fresh.

So it doesn't mean that. It means 2.

I had two eggs for breakfast. The two eggs were not fresh.
So you need to express the negative.
I had two eggs for breakfast and neither of them was fresh.
