Let's imagine that you are a teacher and you must deliver 10 lessons a week but you can choose any days and a different amount of lesson a day. What verb would you use to say:
I am allowed to set my hours as it suits me. or
I am allowed to ____ my hours as it suits me.

I set my own schedule. I'm not held to a schedule.
My understanding from the original question is not about the hours worked, but rather the delivery of 10 lessons in one week.
