Hi,

"Mouse" and "snake" are countable nouns. Can they be used as uncountables if we talk about their flesh as food?
Does"They enjoy eating mouse but never eat snake" sound okay?

I'd appreciate your help.

It is possible to use "mouse" and "snake" when they are used for food and you are talking about them in the general sense.

Yes.

Only for common foods are there two words in English, one for the animal and one for the meat. That is because of the history of the English language.
(To simplify it, poor people farmed animals and spoke Anglo-Saxon. Rich people eat more meat, had cooks, and spoke French Whistle )
So
cow, cows, - beef
Pig, pigs, - pork
Sheep, sheep, - mutton (nowadays mostly lamb)
Deer, deer, - venison


But for anything apart from those special cases, the name of an animal can be used as an uncountable noun to describe the species or the meat.
Chicken, lamb, duck, goose, pheasant, wild boar, crocodile, camel, snake, mouse...

Or you can use the plural of the animal. Especially if they are small enough to eat the whole animal. But that is more about be animal than the meat cooked and served up in a dish:
Cats eat mice and snakes.
