They could both be used but the second sentence gives a clear instruction first so is easier to listen too.

If you see the words if, or wish it's most likely you need to use were. For example: "".

Generally things that aren't a reality. So generally when you are describing reality then you would use was. For example "last night I was watching TV untill midnight".

without reading the context of the text - the word hoped can be defined as: the feeling that what is wanted can be had or that events will turn out for the best.

So what ever has happened for this person to feel sorry for the baker, they hoped things will turn out for the best.

different spellings of the same word - gray is american english, whereas in england we tend to use grey :)
