I couldn't believe Options

a. They made an mistake I couldn't believe.
b. They made an error I couldn't believe they had made.
c. They made an error I couldn't believe they had made it.


Which of the above sentences are grammatically correct?

#1 is correct, except "an" should be "a."
#2 is a winner.
#3 nope.

As palapaguy says, the first two are correct (except for the a/an error).

The first is very slightly more formal than you would usually hear in conversation - but you might see it in a personal "chatty" letter.
The second is more suited to a lecture or printed article.

In conversation, you'd either hear thar's version or something like "They made this CRAZY mistake!" or "I couldn't believe it! The mistake they made!"
These are not "perfect sentences", but are colloquial.
