"What happened?" she said. So I told her what did.

Should I leave out "did" or the sentence won't work this way any way.

If you don't want the full "I told her what (had) happened", then just say "I told her".

"I told her what did" is incorrect.

As BobShilling says, the simplest (and smoothest) way is just, "So I told her."
