Hello,

Suppose there is a bowl with e.g., apples and peaches both cut into pieces in it, which one is correct, a mixture of fruit or a mixture of fruits?

Both are grammatically correct. The choice depends on what the speaker means to express.

"Fruit" refers broadly to type of fruit - apples and peaches for example.

"Fruits" refers to the individual pieces of fruit, regardless of the type each piece is.

In my mind, you can't really have a "mixture of fruit".

"Fruit" is uncountable - it is singular. "Mixture" implies that there are more things than just one - it needs a plural.

You would not say "He drank a mixture of water" or "We breathed a mixture of air." They sound incomplete.

He drank a mixture of water and wine.
We breathed a mixture of air and Helium.
He ate a mixture of fruit and cream.

"Fruits" is the plural - it shows 'types of fruit' - "apples and peaches both cut into pieces" is a mixture of fruits - two fruits.

He drank a mixture of liquids.
We breathed a mixture of gases.
He ate a mixture of fruits.
