Every evening, after dinner, my daughter would have her books ready, waiting for me to read to her.
Is the comma after 'ready' required?

Yes. But 'after dinner' is not necessary. IMO

You can remove the comma after dinner, but if you do, you must also remove the comma after evening.

Thanks. The commas are put around information that is not necessary to the main idea. His daughter had her books ready, but he wants to give additional information about when this happened, and why she did it.
He begins with the when, every evening, after dinner, then gives the why, because she was waiting for him to read to her.
This could also be reversed by giving the "why" first, then the "when". Waiting for me to read to her, my daughter would have her books ready every evening, after dinner.
