Pen pal is a noun -- not a verb.

Pen pal (= pen friend, British English) is a noun. In certain informal contexts, you might find the word "penpalling". To the best of my knowledge, the word is still not a part of a standard dictionary. You will often find the word being used as a gerund. "Penpalling" refers to the action of building a long term and close friendship with your penfriend. It is an interesting way of communication between two people to learn more about other cultures, customs and everyday life in other countries.

It is useful to know that there are several nouns that are also often used as verbs and gerunds. Some of them are a part of a standard dictionary and some are yet to gain formal acceptance.

To me, the use of "pen-pal" as a verb is one of those non-standard but perfectly clear "nonce" usages. I'd prefer it be spelled with a hyphen, simply to avoid any possible confusion.
