What word/phrase could best replace the underlined part please?

It is an idiomatic usage.

having indulged in drinking

Do they sound close to the original?

Well, a bout is a period, activity within a time frame, over a certain amount of time,

They spent some time drinking and then started fighting.
A few ways to describe that.

Agree. Merriam-Webster defines it as: a spell or period of activity: such as

a : an athletic match (as of boxing) "lost his bout with the champion"
b : outbreak, "attack a bout of pneumonia frequent bouts of depression survived her bout with cancer"
c : session, "a drinking bout a bout of unemployment"
