Why can't we use "the performance" here? Would that change the meaning at all?

"A" is an indefinite article and "the" is a definite article. We can use "the" when it is clear which "performance" we mean. "The" is used before a noun ("performance" in this case) which has become definite as a result of being mentioned a second time. In the given text, "performance" has not been mentioned earlier. So, it is correct to say "In a performance marked by amazing maturity ..."
