Skirt steak Options

Much to my surprise while reading about the concept of market in economics I have already noticed:



I wonder, is it safe to eat skirt steak? For me, steak is a steak, but skirt steak?

There are many different kinds of steak cuts, each with a different name in various locations or cultures.

Skirt steaks come from the diaphragm of a steer or heifer:
http://encyclopedia.thefreedictionary.com/Hanger+steak It is supposedly some of the best, tenderest meat

Hanger steaks, or flap steaks come from the bottom sirloin of a steer/heifer.

Near the Mexican border, flap steaks are often called fajita meat, or just fajitas. It's very good. I once had a steer butchered and as it was hanging in the cooler, the butcher pointed out the fajita, or flap meat to me.
