Are these sentences correct:

1) I know him as he deals with people in our office, but I don't know him as he behaves towards women in bars.

2) I know him as he is when he deals with people in our office, but I don't know him as he is when he interacts with women in bars.

They don't sound correct to me. I'd say it differently, that is, "I am familiar with the way he deals with the people in our office, but not with his behaviour towards women he meets in bars".
As to "THE people in our office", I'd use the article unless the office is a public one and the people in there vary continuously.
But I would also like to read some native speaker's opinion :)

It does sound a bit strange with this wording. I think most people might say, "I know how he acts/I have seen how he acts/I know how he is with people in our office, but I don't know how he acts/how he behaves/how he is with women in bars.
