Hi
Can I delete "on"?
"The odor didn't vanish but lingered on for weeks."

Hi!

Yes - I think the 'on' simply emphasises the continuation of the smell.

If the odor were distinctly agreeable or un-agreeable "lingered on" would be more useful than just "lingered".
