Hello respected teachers,

Are both the following correct? Which one would you choose and why?

You can make a smoothie by mixing fruit/fruits, such as bananas and strawberries, in a blender.

Also, "a smoothie" or "smoothies"? Which one is native's choice?

This is a matter of choice here, because you can say it different ways.

You mix fruit together.
Apples and bananas and pears all come under the category of 'fruit' - so you can mix them together.

You can mix fruits together.
Apples and pears and bananas are all different fruits - so you can mix them together.

It changes the meaning very slightly but the result is exactly the same, so it is a personal choice.

You can make a smoothie by mixing fruit, such as bananas and strawberries, in a blender.

You make smoothie by mixing fruit. Extra information is examples of fruit you can use , such as apple and banana. You could use just one fruit, but it is logical that you can combine two or more together.

You can make a smoothie by mixing fruits such as bananas and strawberries in a blender.

You can make a smoothie by mixing together different fruits, which I have listed. You need to use at least two different fruits.

In my opinion Fruit is a countable noun.

2 kg mangoes, a dozen Bananas, a pack of Kiwi Fruit etc.
